Apple Pie
- 1 basic crust recipe or pre-made crust of your choice
- 7 or 8 tart green apples (about 1 cup each) McIntosh, Granny Smith, etc.
- 3/4 cup light brown sugar
- 1 - 2 tsps. lemon juice
- 2 tsps. ground cinnamon
- pinch of salt
- pinch of nutmeg
- 2 tbsps. instant tapioca or 1 tbsp. flour
- 1 Tbsp. unsalted butter
Peel the apples and slice them thinly. Put them in a medium bowl and sprinkle
them with the lemon juice.
Stir the dry ingredients together, sprinkle this mixture over the apples and
toss gently to coat evenly. Set aside for 1 to 2 hours.
Preheat oven to 425 degrees.
Line the bottom of a 9-inch pie pan with rolled out pie crust. Tip the apples into
the crust, heaping in the middle. Dot with the butter. Roll out the second crust
and lay atop the apples. Crimp the edges and make 4 or 5 slits in the top crust.
Sprinkle the top crust with sugar, or even tastier, baste the crust with warmed
apple jelly.
Bake for 10 minutes.
Lower the temperature to 350 degrees and bake for an additional 35 – 40 minutes
or until the crust is golden brown. Transfer to a wire rack and cool for one hour.
Serve warm or at room temperature.
